Banana Bran Bars



Ingredients --
  • 1 cup oat flour**
  • 3/4 cup bran cereal, slightly smashed
  • 1/4 cup protein powder
  • 1 teaspoon baking powder
  • 1 cup mashed banana, about 3 small ones
  • 1/2 cup brown sugar
  • 2 tablespoons peanut butter
  • 1/4 cup raisins

Directions --


Preheat oven to 350.

Mix the oat flour, bran cereal, protein powder and baking powder in a medium bowl.  Set aside.

In a large bowl, mix the mashed banana and brown sugar.  Once combined, add the peanut butter.  Slowly add in the flour mixture.  Fold in the raisins.

Pour batter into a greased 7 x 11 inch pan.  Bake until toothpick comes out clean, about 16-18 minutes.  Let bars cool and cut into squares.  Store in air-tight container or wrap individually and place in fridge.

Makes 6 servings.

**Notes:  If you don't keep oat flour on hand, you can make your own by grinding old fashioned or quick cooking oats to a powder.  I grind mine in a coffee grinder but a food processor would work too.
