Green Pizza

I found this recipe on EatingWell.com.  I followed the recipe for the most part, but to try to save on time I used a Jiffy mix for the pizza crust.  When I have more time, I will definitely be making a homemade crust.  Also, it is a lot of arugula, so if you don't like arugula or you aren't sure, I would suggest trying it with spinach first which has a much more subtle flavor.  Last but not least, enjoy!



Ingredients

  • prepared pizza dough
  • 2 cups broccoli, chopped
  • 1/4 cup water
  • 5 ounces arugula, chopped (about 6 cups)
  • 1/2 cup prepared pesto
  • 1 cup shredded mozzarella cheese
  • salt and pepper, to taste
Directions

Preheat oven to 450, or as directed from pizza dough recipe.

Roll out dough on floured surface.  Transfer to lightly greased baking sheet and bake for 8-10 minutes, until lightly puffed.

While the crust is baking, heat broccoli and water over medium heat until broccoli becomes slightly tender, about 3 minutes.  Stir in arugula until it is wilted.  Sprinkle vegetable mixture with salt and pepper as desired.

Once crust is partially baked, spread evenly with pesto and green mix.  Top with mozzarella cheese and bake until cheese is melted, another 8-10 minutes.

Makes about 4 servings.
