Ingredients
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1 1/8 teaspoons salt
- 2 sticks unsalted butter, softened
- 1 1/2 cups brown sugar
- 3/4 cups granulated sugar
- 2 eggs
- 2 teaspoons pure vanilla extract
- 2 1/4 cups rice krispies
- 1 3/4 cups chocolate chips
- 1 1/2 cups coconut flakes
Directions
Preheat the oven to 350.
Combine flour, baking soda and salt in a bowl. Set aside. In a separate mixing bowl, beat butter and sugars on medium-high until fluffy. Next beat eggs in one at a time on low speed. Add the flour mixture and vanilla, be careful not to over-mix. Stir in the rice krispies, chocolate chips and coconut flakes until well combined.
Drop spoonfuls of dough onto ungreased cookie sheets. Bake for about 12 minutes. Allow cookies to rest a few minutes before transferring to a wire rack to finish cooling.
Makes about 5 dozen.
