Sweet Potato Chips

I found this idea here at Undressed Skeleton.  I highly recommend reading her story, it is truly inspiring.  She also has plenty of recipes to share like this one!




(Her original post had two flavor options: sea salt and vinegar as well as cinnamon and honey.  I wanted to try the sea salt version and then decided to make up my own: olive oil and garlic.  I'm sort of addicted to garlic.)

Ingredients
  • one sweet potato for each flavor you try
  • 1 tablespoon vinegar
  • 1 teaspoon sea salt (I always forget to pick up sea salt at the store, so I just used plain ol' salt)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
Directions

Preheat oven to 425.

Thinly slice sweet potatoes and place in resealable bag or in large mixing bowl.  Set aside.  (Keep separate if making multiple flavors.)

Mix flavorings in small bowl.  Add to sliced potatoes and thoroughly coat.

Spread potatoes evenly onto lightly greased baking sheet (over-lap as little as possible).  Bake for 15-20 minutes or until crispy.
